Low Sodium Orange Glazed Chicken

Low Sodium Orange Glazed Chicken

Recipe

4 medium chicken breasts (2 lbs.)          1 Tbsp. olive oil

    Boneless and skinless                         1/2 Tsp. garlic powder

1/2 Tsp. chili powder                                1/2 Tsp. smoked paprika

4 Tbsp. orange marmalade                      2 oranges, thinly sliced

1/2 Tsp. black pepper                               parsley for garnish

 

Preheat oven to 425*

Thinly slice oranges with peel on.

In a 13 x 9 baking dish, cover the bottom with orange slices in even layer.  No grease is needed.

Place chicken on top and drizzle with olive oil.

In a small bowl, mix pepper, garlic powder, chili powder and paprika.

Cover top of chicken with 1 Tsp. of spice mixture.

Over spice mixture, spread 1 Tbsp. of marmalade over chicken.  Use back of spoon for spreading.  

Bake for 25 - 35 minutes.  Thicker chicken will take longer to cook.  Temp should read at least 165*.

Garnish with any remaining orange slices and/or parsley.

 

Tip:  For sweeter chicken, more marmalade may be used to coat                   chicken before cooking.
