Homemade Meatballs

 

Here is a recipe that is great for a quick weeknight dinner.  These meatballs can be used in a variety of dishes.  Spaghetti, Meatballs with gravy and mashed potatoes, Meatballs with noodles...just to name a few.  What makes this so versatile is freezing the meatballs after cooking and just taking out what you need.

 

Ingredients needed:

 

1 lb lean hamburger                     1/2 tsp. oregano

2 eggs, beaten with                        1 tsp. salt

   1/2 cup of milk                             Pepper to taste

1/2 cup grated Parmesan              1/4 cup minced parsley or basil

1/2 large onion, finely chopped      1 cup bread crumbs

2 - 3 garlic cloves, minced

 

Mix all ingredients in medium sized bowl with your hands.

Form into golfball sized meatballs.  (About 20)

Place meatballs inside a muffin pan or on a rimmed baking sheet.

Bake at 350* for 30 - 35 minutes.

 

To store in freezer:

 

Allow the meatballs to cool completely.

Place meatballs on a cookie sheet without touching each other.

Place in freezer for about 4 hours.

Once the meatballs are frozen completely, transfer to a freezer bag, squeeze out any air and seal.

When you are ready to use, simply take out how many you need.

You can warm them in the microwave or simply add them to soups, stews or simmering spaghetti sauce.

 

Tip:  This recipe can be easily doubled.

        The meatballs will keep in the freezer for 3 months.

        Hamburger can swapped out with ground chicken or turkey.
